Well, as I'm in England, I haven't had to do too much cooking, but today I decided to give the boys (boyfriend and his housemate) a bit of a treat.

This morning we had french toast with homemade apricote compote (sugar syrup with chopped apricots, orange zest and the juice of one orange boiled for a bit until the apricot started to disintegrate) for breakfast.

Tonight, we're having a bit of a New Year's eve celebration with some of their friends, so I'm making pot roast with potatoes, carrots, steaming some broccoli, and making some boiled chocolate cookies as well :)

Well we did Pan Roasted Lobster from Le Bec Fin and this morning we will have blue berry pancakes with scrapple.

The wife has made a New Years Resolution to use more home made dry cured ham since we have about 7 pounds left and I just hung the second to dry over the winter.
If you can remember the 60s you weren't there.

Tonight I'm making something called Moroccan Pork Chops out of a Pampered Chef cook book. Now I can't see anyone in Morocco eating pork chops. :?

It's basically pork chops with a balsamic reduction with green olives, capers and raisins. I think a name like Mediterranean pork chops or something like that would be better, it just doesn't make sense naming a pork dish after a Muslim country. Unless it is the 1.1% Christian population that eats it, because it's probably not the 0.2% Jewish population. :wink:

Update: It was really good.

Tonight I'll be making St. Rémy Tuna. I love fish, but nobody else in my family likes it as much I do, so it is rare that I get to make any. This is just a simple recipe from the South of France. The tuna steaks are served with a sauce of white wine, garlic, herbes de Provence, and tomatoes.

Tonight was broiled tuna steaks with cilantro-lime butter and "Spanish" stuffed peppers. Mmmm good!

Breakfast: Toast with nutmeg

Lunch: Plain cheeseburger Happy Meal with a Mr. Pibb

Dinner: Steak sandwich. A thin piece of steak between 2 slices of rice and almond bread, smothered with Feta cheese and a side of steamed carrots.

Dessert: Oreos and milk

Breakfast, lunch and dinner: dry toast.

For some reason, I've ended up with this strange virus that, while I don't feel ill or throw up, makes ANYTHING I eat or drink give me incredible gas pain (even water) and has me so bloated that I can't find anything that fits properly (even though I haven't gained an ounce, and have actually LOST a few pounds). *sigh*

On the flip side, it's amazing how fantastic toast tastes when it's all you can eat!

Tomorrow's lunch:

Spicy pasta salad (basically rotini, cubed avocado, a home-made lemon/mustard vinaigrette, some crushed red chilies, a bit of basil, and a thinly sliced, barely-cooked pepper steak!)

Of course, after I'd finished making it, I couldn't resist sampling a few bites (it looked SOOOOO good!). Fantastic :D I love experimenting!

For breakfast this morning for my wife and i, I grabbed the ol bed tray and put out a small spread of freshly brewed coffee, a 3" square of soft ripened robiolo cheese, some water crackers, a sliced up firm white peach, and a 4" chunk of a well ripened fermented sopresatta-like sausage that i sliced up.

I dont usually eat food that heavy for breakfast, but with the meal calendar full for the next few days we wanted to use it up before it went past peak.

Breakfast: Cereal (there were no eggs...)
Lunch: Half of a 6-inch subway sub (Italian BMT, pretty good)
Dinner: The other half of the sub

This is what my average daily food intake is...

Breakfast: Bacon, eggs, spaghetti, porriage, yoghurt and fruit salad. All for $2. Hah! Mean.

Morning tea: protein shake, fruit.

Lunch: huge sandwich from shop, fruit.

Afternoon tea: protein shake, fruit.

Dinner: Whatever is going at the galley.

Echus, you eat so much more healthy than I do!

Due to my schedule today (which I offered to take no lunch, my supervisor was appreciative and then when my servers went down, the supervisor helping me did not even care and acted like a freakin b**** to me and didn't even care that I had worked hard on that call in a little corner by myself for SEVEN FREAKING HOURS!) <<<Sorry, it was a s***** day.

Breakfast - had waffles with my brother
Lunch - Subway pizza (subway is close to work)
Dinner - Usually gets skipped

Hm... I'm ashamed to admit that last night's dinner was a couple of cheesestrings and a little strawberry tart (the little 2 inch ones).... When it's hot out, I'm just not hungry :(

Lately breakfast has been a handful of dry maple mini-wheats and some grapes (I usually buy red, black and green, take them all off the stems, wash them and keep them in containers in the fridge, so all I have to do is grab a little baggie in the mornings and fill it up). I snack on sugar snap peas during the morning, and then I either have a few crackers or go to the cafeteria for lunch (depends how hungry I am).

In the afternoon, I snack on carrot sticks and grape tomatoes, and dinner is usually pork chops or small steaks with baked potatoes and a steamed vegetable, unless it's too hot, in which case it's either a PB&J sandwich or nibbling on whatever's handy (which is rare, since I don't buy much pre-made food).

*sigh* I really need to stop being so lazy about cooking, but summer sucks when you don't have any A/C.

It is sucking.... a lot... If I had the money, I'd set up a small 5,000 BTU a/c in my back window, and buy a portable 10,000 BTU for the front window. It'd be nice because my son has fairly severe seasonal allergies (like will wake up in the middle of the night with attacks, and it starts the second he wakes up in the morning) and I'd like to be able to keep the windows closed. His stays closed.

New food goal. I'm going to try to make one vegetarian meal per week. Reasons are:
-eating meat (especially beef) makes my digestion sluggish and I forget how uncomfortable it is until I go back to not eating any;
-trying to reduce my meat consumption for environmental reasons;
-trying to switch things up by not sticking to a meat & starch formula;
-trying to teach my kids healthy eating habits that include a wide variety of foods;
-been toying with the idea of going veggie again and I figured I'd try it out in bits and pieces before making a major life change on behalf of my whole family LOL (i.e. see how the kids like vegetarian fare).

Yesterday I didn't eat much...

Breakfast - waffle
Lunch - I had a few spoons of ice cream...
Dinner - broccoli and cheese, macaroni and cheese, field peas, and baked chicken (it was really good)

I think I'm good in Alabama...WITH A/C.

I just cannot deal with heat. It should perpetually be October - January.
