I had it right but checked to be sure :).

This bitch bites, he reminded himself.
Book?
Who is the bitch?
Who is he?

And bonus: Apparent from that bitch, there are (I believe :)) only two times in whole Vorkosigans when dogs are mentioned. First is easy, just before bitch :). Where is second?

According to Ghost a question is cold after 5 days.
I've known the answer for a while (I guessed the correct ansewer as soon as I read the question, but not the right place in the book, it took me a few hours to actually find the quote).
So if anyone thinks he can answer soon, as Blackwing did last time, I'll wait a bit more, otherwise I'll just post the answer tomorrow evening (Paris time)

 It's still the 7th, not the 8th by forum time. I forgot you are on Central Time (GMT-5), not Eastern Time (GMT-4)
Anyway, I mean on the 9th, about 3 or 4pm forum time, bedtime for me.

OK, there has been 5 days now and though I was not supposed to answer, the question is cold enough:

Book: Vor Game
Miles ("he") is thinking (not speaking) about the "bitch" Cavilo.
This is in the last chapter, just a few pages before the end.

Bonus question:

There is one real living dog in the Saga. In "Brother in Arms", in London on Old Earth: when Miles and Elli are waiting for Duv Galeni before proceeding to their appointment with Ser Galen (and Mark). Just befoe Galeni arrives there comes "a jogger and his dog".

Just as a remark: though there are no dogs on Barrayar, Komarr, Beta, anywhere but Old Earth, one can wonder at the number of allusions to dogs, not real ones, but humans compared to dogs, metaphorically. Mostly negatively ("bitch bites"), but sometimes positively: Bothari's faithfulness is compared to a dog's by Cordelia, Miles an even Bothari calls himself "Lady Vorkosigan's dog" (in "Barrayar"). But since these metaphorical allusions are many, it follows RK's question is on "real" dogs, not humans. So my answer "jogger and dog" stands in spite of this paragraph.

....Interim reports tend to elicit orders. Which you must then either obey, or spend valuable time and energy evading, which you could be using to solve the problem."

"An interesting command philosophy; I must keep it in mind. Do you share it, XXX?"

"Oh, yes."

"The YYY must be a fascinating outfit to work for."

Who speaks second and last?
Who is XXX?

Rereading my question I wonder if I was quite clear. There are 3 speakers, here: WWW speaks first, then ZZZ, then XXX and ZZZ concludes.
I'm asking the names of all three, plus that of Organisation YYY (plus, of course, what book it is in, so there are 5 questions altogether)

The book: Brothers in Arms.

First speaker is Miles, second Galeni and third is Elli Quinn. Organisation is the Dendarii Mercenaries.

"By surprise. Also by boat."
"How big was the boat?"
What book and who are the people talking? Also, what or who is the surprise?

XXX laughed; YYY was subtly reassured. "I was just a little taken aback. That--that wasn't the proposition I was expecting, is all. Excuse me. I fear I am become incurably low-minded."

"You can't help that, I'm sure," YYY said tolerantly. "Being female, and all that."
Who is XXX, Who is YYY and what was the proposition?

Who is XXX, Who is YYY and what was the proposition?
XXX is Elli Quinn, YYY is Ethan, and the proposition was not what low-minded-XXX thought (and what you are all thinking, incurably low-minded readers!) but to donate one of her ovaries to the Athos reproduction centers so she can have hundreds of sons that she will never see.
In "Ethan of Athos", of course!

"It's not over, is it?" XXX said quietly to YYY, (...) "Somehow, I
thought our troubles would be over if only we could get away from ZZZ"
(...)
"Our troubles would have been over if ZZZ had scored a hit. Or if
(...) or if-don't be afraid of troubles, XXX. They're a sign of life.
We'll deal with them together-tomorrow."
Book?
Who are the three characters mentioned (in the quote, XXX and YYY call
ZZZ differently, but any appellation for ZZZ is OK)

Hmmmmmmmmm........

No answer yet?

OK, so I'll up the ante, I'll add a bonus, but at the same time give you a hint. First I'll give the full, unexpurged quote (or almost unexpurged... I had to delete a hint that was really too obvious)

"It's not over, is it?" XXX said quietly to YYY, as they floated out of WWW's way. "Somehow, I thought our troubles would be over if only we could get away from ZZZ1."
YYY shook his head. A jubilant grin still kept crooking up the comer of his mouth. (...). "Our troubles would have been over if ZZZ2 had scored a hit. Or if the vortex mirror had blown up in the middle of the Jump, or if-don't be afraid of troubles, XXX. They're a sign of life. We'll deal with them together-tomorrow."
So the question remains:
-Book?
- who are XXX, YYY and ZZZ?

Note that XXX and YYY call ZZZ by two diffferent designations, but I do not insist on either ZZZ1 nor ZZZ2. If you don't find the exact place of the quote but can remember, or guess, who ZZZ is, any unambiguous designation for ZZZ is OK. You don't need WWW for the Sherlock nor the next question.

Now, the bonus:
The name WWW reappears in a different book. But not as the name of a person. And what is called WWW is not named because of the WWW of the quote but some other person by the same name.

So bonus question:
What name is WWW?
Who is the WWW of the quote?
In what book does the name WWW reappear?
What is it, that is called WWW in that book?
Who is the WWW, different from the WWW of the quote, that it is named for?
And why does it stands to reason that it is named for that other WWW?

OK, one more hint: in that book, both WWW have been dead for quite some time.
Human is as human does....Animals don't weep, Nine

Oh, come on, folks!
I practically gave it away.
There are no vortex mirrors nor Jumps in The World of Chalion. And we agreed to quote only in that world and in the Vorkosigan Nexus.

And by saying
both WWW have been dead for quite some time.
... where can there be "quite some time" in the timeline?

Yes, yes, yes, and no.

ZZZ is not :?
ZZZ is Bruce Van Atta, whom Silver calls Mr. Van Atta, and Leo calls "Brucie-Baby"

However the question is quite cold, you got 3 out of 4, so as far as I am concerned you deserve the Sherlock.
However, better to wait for an administrator, Ghost or clong, for instance, to confirm that I am allowed to lower my own original requirements, after such a long wait.
As soon as an administrator confirms, go on and post, and I'll give you the Sherlock. As far as I am concerned, I'm for it!

Any idea about the bonus?
